If there’s one thing I know about my mom, it’s that she has some very distinct “favorites” in life. Things that I know she loves without question. Babies, Southern cooking, Diet Coke, rum & Diet Coke, her plants, her small house, her Corvette, me (ha ha), her family, hot HOT peppers, onions and PEACH COBBLER!

Come catch a whiff of my apartment right now, and you might just have a new favorite, too. It smells like HEAVEN! I mean, I’m not sure what heaven smells like or if it even has a smell at all, but if it did, this is precisely how I might describe it.

So, back to my mom. Tomorrow is this woman’s birthday. She is definitely a remarkable lady. Not only did she have me, but she raised me and put up with me for 24 years and counting. She did a pretty good job, I think. So for her birthday, I wanted to thank her for all that she has done and for being the amazing lady she is by baking up one of her favorites—peach cobbler.

Sweet Peach Cobbler for Your Momma

‘Greds You’ll Need:

  • 4 cups of peaches, peeled & sliced
  • 2 cups of sugar, divided
  • 8 tablespoons butter
  • 1/2 cup of water
  • 1 1/2 of cups of self-rising flour (you MUST use self-rising!)
  • 1 1/2 cups of milk
  • Ground cinnamon, only if you like

Simple ‘Structions

1. Get the oven up to 350 degrees F.
2. Mix the peaches, 1 C sugar and 1/2 C water in a medium saucepan over high heat until boiling. Reduce heat to medium and simmer for about 10 minutes. Remove from heat and let sit.
3.  Put the butter in a 3-quart baking dish (ya know, a Pyrex or another glass baking dish) and place in oven. Keep a close watch on this and remove when the butter has all melted.
4. While the butter is melting, combine flour, the other cup of sugar and milk. Stir slowly to avoid caking.
5. Once you remove the melted butter from the oven, place on counter and pour the flour/sugar/milk mixture (I guess you’d call it a batter) right on top of the melted butter. DO NOT MIX. I don’t care what it looks like. DO NOT MIX IT. Seriously, don’t do it!
6. Take those sweet peaches and slowly ladle them right over the batter, carefully pouring the syrup in, too.
7. Top the whole thing off with a sprinkle of ground cinnamon (if you like), and then pop this sucker into the oven for 35-45 minutes.
